New Hotel Restaurant, Nourish at St Michael's Resort

Proudly Cornish in aesthetic and outlook, the premium Falmouth-based hotel, St Michaels Resort, has opened the doors to its brand-new all-day dining restaurant, Nourish. Combining fresh, local ingredients, with bold and vibrant flavours, the sharing plates at Nourish celebrate the bounties of Cornwall's land and sea in a relaxed and friendly setting.

New head chef, Darren Kerley, showcases the flavours of his home county of Cornwall, making his culinary mark on this luxury seaside hotel. The Nourish team works closely with local farmers, brewers and distillers to showcase the best of Cornish produce and the abundance of Cornwall's land and coast – provenance is king.

Vibrant salads and flavourful shawarmas will be front and centre on the menu, and a wood-fired pizza oven adds a rustic charm to this laid-back restaurant, offering hand-made artisanal pizzas with a selection of toppings, for the ultimate nostalgic comfort meal.

The bar team at St Michaels Resort has carefully curated a menu of local gins such as Tarquin's Gin and Loveday Gin and selected premium wines from Knightor Winery which showcase the best of the Cornish botanicals grown in the surrounding landscapes. Nourish's farm-to-glass concept ensures that guests are always aware of the provenance of their drinks - the journey of Cornish ingredients from the fields to their glass. Guests are welcomed for an evening tipple, accompanied by artisanal snacks, such as Cornish cheeses, cured meats, and hand-crafted crisps, or for a more immersive experience, the hotel organises interactive tasting sessions where guests can taste their way around the county via the restaurant's gin flights and seasonal, signature cocktail menu.

Nourish has been designed to be a social hub of the hotel – a cosy and informal lounge area with comfortable seating, ambient music and soft lighting which instantly allows guests to relax. The earthy hues and coastal blues reflect the surrounding Cornish landscape alongside the use of rustic, natural materials, bringing the outdoors in. Fostering an atmosphere of social interaction and conviviality, live music will be scheduled to accompany guests' summer evenings in Falmouth, as well as mixology classes and themed events.
